Super Easy Caprese Avo Summer Salad

Layers of flavor and perfect for a light lunch or healthy dinner.! Finish off with a sexy combo of basil pesto and balsamic, and you’ll be a huge hit at any picnic, potluck, or backyard barbecue...just in time for the 4th of July!!

What you'll need:

1 cup grape or cherry tomatoes, halved

8 oz fresh mozzarella, diced

2 tablespoons basil pesto (homemade or store-bought)

1/2 small onion, minced

1/2 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze (store-bought or use the recipe in the notes)

What you'll do:

  • Combine tomatoes, avocado, mozzarella, onion, garlic, basil, salt, and pepper in a bowl. Top with pesto and olive oil then mix well to evenly coat in the dressing.

  • Drizzle with the balsamic glaze, if using.

  • Adjust seasoning with salt and pepper, if needed.

  • Serve the Caprese avocado salad immediately,


Note: This tomato avocado salad is a good low-carb / keto option for lunch, just omit balsamic at the end of the recipe.
