This overnight paleo porridge recipe is super easy to make. You can enjoy it cold or heat it up for a warm and comforting breakfast.... times when I want a break from actual oatmeal...this is it!
What you need:
2 tablespoons coconut flour
1 tablespoon chia seeds
1 teaspoon ground flaxseed (flax seed meal)
1/4 cup (4 oz.) coconut milk or almond milk - for more for texture
1 tablespoon maple syrup
What you'll do:
Mix the dry ingredients in a 12 oz glass jar.
Add the coconut milk and maple syrup and stir until the milk absorbs the dry ingredients.
Let it sit for a couple of minutes. Stir it again, cover it, and refrigerate overnight.
When you're ready to enjoy your porridge (cold or heated), top it with your favorite toppings and enjoy!
This porridge is best if enjoyed within 24 hours of making.
