Kale Cranberry Butternut Salad with Tahini Honey Dressing

I tossed this baby together for Thanksgiving this year - and it was a hit! The dressing adds the perfect sweet & tangy bite - it's a Keeper!


What you'll need:

  • 2 Bunches of kale, washed, chopped & massaged

  • 1 Bag Butternut Squash or 1 baked & chopped

  • 1 Cup broccoli slaw

  • 1/2 Cup Goat Cheese

  • 1/2 Cup nuts or seeds of choice - (I used Candied Pecans, but pumpkin seeds would be good)

for the Dressing:

  • 1/3 cup olive oil

  • 1 TBSP Coconut Aminos

  • 1/2 Cup Tahini

  • Juice of 1 Lemon

  • 2 TBSP Honey or Maple Syrup

Shake in a jar or blend in high-speed blender until we'll combined.


Toss all ingredients together & drizzle with dressing - serve immediately!


Perfect as a side or add chicken or salmon on top for an easy meal.
