Don't get me wrong - not throwing shade at that super easy & surprisingly good microwave pouch oatmeal, but the stovetop version is where it’s at!
A little more work....but so worth your effort!
It's creamier and thicker than the micro-version, & adding in mashed banana adds even more creaminess along with the perfect amount of sweetness.
Hope you love it as much as I do!
Here is what you'll need ....
1 cup nut milk (or coconut milk)
1 cup water
1 cup rolled oatmeal
1 mas
hed banana
1/2 cup fresh/frozen blueberries
1/2 tsp chia seeds
1/2 teaspoon cinnamon
1/2 tsp vanilla
1 tbsp maple syrup (optional if you prefer less sugar)
1–2 scoops collagen (optional) I like using vanilla
Place all ingredients (minus the collagen) into a medium sauce pan. Turn to medium high heat, mix, and bring to a boil....make sure to begin stirring as it boils!
Turn heat down to low and simmer for about 5 minutes, stirring consistently until oatmeal thickens up....
Then stir in collagen (and additional milk if needed to thin), and cook for another minute
Top with a good heaping Tsp of your fav nut butter (I find that packets of nut butter work perfectly for this!)
Add any other toppings that sound good - walnuts, chopped apples, shredded coconut, etc
Enjoy!
