These little nuggets are crunchy on the outside, sweet/salty inside... AND may just be better than my favorite oatmeal chocolate chip!
1 cup rolled oats
1/2 cup almond flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup tahini (can sub with a different nut/seed butter)
1/4 cup maple syrup
1 tsp vanilla extract
1/2 cup Chopped Medjool Dates
Here is what you do...
Preheat the oven to 350ºF.
In a mixing bowl, stir together the oats, almond flour, baking soda, and salt.
Add the tahini, maple syrup, and vanilla.
Mix to form a thick dough.
Fold in the chopped Medjool dates.
Scoop/roll into balls and arrange on a cookie sheet lined with parchment paper
Bake for 10-12 minutes at 350ºF or until golden around the edges.
Remove from the oven and cool for at least 10 minutes.
...these are delish warm!
Keep leftovers in an airtight container in the fridge for up to a week, or freeze for longer storage.
Try to eat just one!
