Pumpkin Spice Overnight Oats
It's Fall, Ya'll...and that means all things Pumpkin Spice! well, maybe not everything, but who can resist this take on Overnight Oats - packed with protein, good fats and soooo delish...you'll be sharing this one with all your besties!
what you need...
½ cup unsweetened coconut mill
½ cup rolled (or old fashioned) oats
2 tablespoons pumpkin puree
¼ teaspoon pumpkin pie spice
¼ teaspoon vanilla extract
1 teaspoon ground flaxseed
2 teaspoons pure maple syrup
1 scoop vanilla protein powder (optional)
1 tablespoon chopped walnuts (or any nut you like)
Grab a pint size mason jar and combine coconut milk, rolled oats, pumpkin puree, pumpkin pie spice, vanilla extract, flaxseed, protein powder and maple syrup.
Mix until completely combined - or shake it up real good!
Put lid on and store in refrigerator for 8 hours or overnight.
When your ready to dive in...just stir and add a little more coconut milk for consistency.
Top with a handful of walnuts and enjoy!
