Crunchy Kamut Salad + Dried Cherries & Lemony Basil Dressing

Healthy, fast, simple & soooo delicious! This is a perfect summer side dish or even as the main with a serving of protein if that's your thing!


RECIPE:

2 cups prepared Kamut

1/4 cup chopped pecans

2 carrots, chopped

2 stalks celery, chopped

1 med cucumber, chopped

1/2 cup dried cherries

1 scallion, white & green chopped


Combine all ingredients in a large bowl & chill while you prepare the dressing.

Pour 3-4 TBSP of dressing & mix well.

Serve chilled or at room temp.

Enjoy!
