A super easy & delish recipe to whip up when the pasta craving strikes! It packs a rich flavor profile - guaranteed to please your tastebuds...AND a huge protein punch with Sardines.
What you'll need:
½ cup extra virgin olive oil
⅓ cup onion, finely diced
3 cloves garlic, sliced
1 can sardines, finely chopped
1 tbsp capers
¼ cup sun-dried tomatoes
¼ cup parsley
4 servings whole wheat or brown rice spaghetti (about 4 cups when cooked) OR any Gluten-Free pasta, like Banza 0r Capellos
What you'll do:
Cook the pasta according to the instructions on the box.
Once cooked, drain and cool with a little running water. Drain again really well.
Next, preheat a large pan on medium heat and add ¼ cup of olive oil.
Add onion and garlic.
Sauté, stirring regularly until lightly browned.
Add the sardines, capers, sun-dried tomatoes, remaining olive oil, and parsley.
Stir well.
Finally, add the pasta. Stir very well and serve immediately.
Store leftovers in fridge for 1-2 days...
